What is Pancake Day? Many people are familiar with Mardi Gras celebrations on the day before Lent. But in Liberal, Kansas, the day before Lent means just one thing – it's Pancake Day. One doesn't have to live in Kansas to enjoy pancakes on this day. People from all across the country can whip up a plate of flapjacks and cover with their favorite toppings.
