National Gumbo Day gives the public a chance to prepare and enjoy a savory and satisfying pot of gumbo. Gumbo actually is a dish most associated with Louisiana and is the state's premier cuisine. Gumbo consists primarily of a strongly-flavored, roux-based stock, meat or shellfish and a thickener. Traditional soup vegetables, such as carrots and celery are included, as well as onions and peppers. No one quite knows the origins of gumbo, but thanks to the melting pot of cultures that landed in Louisiana, it is as unique as the Creole, Caribbean and French influences in that state.
