National Chocolate Eclair Day pays tribute to the delicious cream-filled pastry that is covered with a sheeting of decadent chocolate ... the eclair. Eclairs are made with an egg-based French choux dough, the same dough used to make cream puffs. It is piped into an oblong shape and baked until crisp and hollow inside.
