Burnt ends are the delicious trimmings that come from the point of beef brisket. They were once considered leftovers, but barbecue chefs have proven just how useful and tasty burnt ends can be — especially in Kansas City where eating them is tradition. Burnt ends may be a little more crispy than other parts of the brisket, but they are versatile in stews and sandwiches.
National Burnt Ends Day was established in 2021 by American Royal, known in Kansas City for rodeo, livestock and barbecue competitions.
